
When I went grocery shopping on Sunday, I thought it would be nice to have some red meat this week – this is a definite rarity. I bought the top round (I think) cut so that I could do a london broil. It was SOOOOO good and we ate outside with a couple of bloody mary’s to boot!
For the London Broil, I used my Mom’s teriyaki recipe…marinated it in a zip lock bag for about 2 hours and made sure to get the meat to room temperature before grilling. I served the meat with sides of grilled corn on the cob, sauteed spinach and roasted potatoes. I will explain how I did the corn after I write about the meat.
Teriyaki Marinade
¼ cup vegetable oil (I use EVOO to make it healthier)
¼ cup of soy sauce (low sodium, of course)
2 tbsp (or squirts) of ketchup
1.5 tbsp of red wine vinegar
4 cloves of garlic, minced
Freshly ground black pepper
Whisk together and you’ve got your marinade
Meat Prep
Rinse of the meat and then pat dry with paper towel
Poke holes in both sides of the meat with a fork (I do this, but Alton Brown may disagree…it’s up to you)
Sprinkle with a little meat tenderizer on both sides
Put the meat in a zip lock bag and pour in the marinade
Let it marinate for about 3 hours
For the last hour, take the meat out of the fridge to bring it to room temperature before grilling
Grilling
Light the grill and pre-heat on high for about 10 minutes
Put the meat on for about 4-6 minutes on each side depending on how big your piece of meat is
I like to use the temperature to figure out when my meat is ready. Today, I cooked until about 130 degrees and it was PERFECT for me. I like mine like a Medium Rare Plus so that it’s VERY pink in the center and pink throughout the steak as well.
Once you’ve reached the desired temperature, remove from the grill and let it sit covered for about 10 minutes
Slice the meat up and serve
Grilled Corn on the Cob
Soak the corn on the cob with the husks, etc. in a big pot of water for about 1 hour prior to grilling
Preheat the grill for about 10 minutes
Put the corn on and let it cook for about 30 – 40 minutes
Remove and take off husks, etc. (this will be HOT so be careful
Done and done.
